Honey notes in chocolate are floral-sweet rather than pure sugar sweet: the complex nectar of wildflower honey, beeswax, or fresh honeycomb. This note often bridges sweet and floral categories and appears in beans from biodiverse, florally rich growing environments.
What Causes It
Aromatic aldehydes and esters associated with honey production overlap with certain cacao fermentation products. Origins grown in biodiverse agroforestry with rich floral ecosystems (particularly in Hawaii, Ecuador, and parts of Central America) often develop this character. Some believe local bee pollination of nearby flowers contributes.
Where to Find It
Hawaiian Kona-grown cacao is often noted for honey character. Some Colombian and Ecuadorian high-altitude beans also show this quality.
