Mushroom notes in chocolate conjure the forest floor: damp earth, the umami richness of dried porcini, or at their most intense, the pungent luxury of truffle. This is an acquired taste and marks genuinely unusual, complex chocolate.
What Causes It
1-Octen-3-ol and other fungal volatile compounds can appear in cacao that has undergone unusual fermentation or storage conditions. Small amounts add interesting complexity; larger amounts suggest fermentation problems or mold.
Where to Find It
Uncommon: occasional finds in some South American wild-harvested beans and certain unusual microlots.
