Fermentation
5-7 day box fermentation. The Hispaniola variety produces a distinctive earthy-fruit combination that divides opinion; some find it funky, others find it complex. Fermentation consistency has improved with cooperative investment.
Roasting
Medium roast is the sweet spot. Light roasts can expose unpleasant vegetal notes if fermentation wasn't perfect. The tobacco and earthy base is heat-stable; the fruit notes emerge in the mid-range.
Maker Notes
Organic certification is common and reliable here. The wine and tobacco character makes for interesting single-origin bars. Tends to be more affordable than comparable complexity from South American origins.
